The process of harvesting, vinification and aging is the same in both cases. After green pruning and thinning of bunches, the grapes are harvested manually and transported to the cellar in boxes of 14 to 16kg. The winemaking is done by settling for 48 hours, followed by fermentation at low temperature (14-15 ° C) in stainless steel tanks for two weeks. Later aged in bottle for three months in the basement of Herdade das Servas. These are wines to consume at a temperature of 12-14 ° C, while still young, so between 2011 and 2012.

The harvest 2010 'Monte das Servas White Escolha' is produced from the blend of varieties Roupeiro (50%), Antão Vaz (30%), Viognier (10%) and Arinto (10%), presenting with a Auburn citrus color, ripe tropical fruit flavors integrated with notes of honey. Fresh, fruity and elegant with good acidity, ends with a pleasant and persistent.
This is a wine to be consumed daily for demanding consumers. It has an alcohol content of 14% and price recommended € 4.54.
It is worth noting the historical distinctions of 'Monte das Servas White Escolha” between wines from Alentejo, in particular as regards the contest "The Best Wines of Alentejo," sponsored by the Confraternity of the Alentejo Wine Society, where it earned a silver and two bronze medals.
