The Herdade das Servas estate comprises over 350 hectares of vineyards, with the Azinhal, Judia, Monte dos Clérigos (the oldest) and the Servas grape varieties standing out. The vineyards have different and complementary ages (some are over 70 years old) and personalities.
Planted in sections, several grape varieties are found in the Herdade das Servas vineyards:
Reds: Alfrocheiro, Alicante Bouschet, Aragonez, Cabernet Sauvignon, Castelão, Merlot, Petit Verdot, Sangiovese, Syrah, Touriga Franca, Touriga Nacional, Trincadeira and Vinhão.
Whites: Alvarinho, Antão Vaz, Arinto, Encruzado, Rabo de Ovelha, Roupeiro, Sauvignon Blanc, Sémillon, Verdelho and Viognier.
Carlos Serrano Mira oversees the maintenance of the vineyards, while the oenology is under the supervision of Luís Serrano Mira and the oenologist Tiago Garcia. More recently, in 2015, the young oenologist Ricardo Constantino joined Herdade das Servas, who spends a lot of time monitoring the farm/vineyards.
