The Herdade das Servas wine cellar is designed to vinify small parcels separately in temperature-controlled, stainless steel vats and presses not exceeding 14,000 kg.
The storage vats are small enough to ferment grapes into their purest form over the time required for our wine-makers to either produce a masterful blend or opt for a single, excellence-worthy varietal. The Herdade das Servas wine-making team is led by Luís Mira, working in close collaboration with vintner Tiago Garcia.
Our wines are aged in French and American oak barrels crafted by some of the best international coopers, such as Seguin-Moreau, Lafitte, Demptos and Vicard. After bottling, all wines are laid down for at least six months.
